what will make the exhaust pipe get red hot on a 1987 Honda Fat Cat?

I just bought the bike and rebuilt the carb and it still gets too hot. I killed the engine as soon as I saw it get too hot. I rode it and it shifts great and does not smoke and starts on 1st or 2nd kick. The electric starter works too.

My first thought would be that you're carb is WAY too lean!

You might need to go up a size in the main jet.
